FRESH TRUSS TOMATO & EGGPLANT PASTA

Fresh is always best when it comes to cooking and this light and hearty pasta recipe- combining Truss tomatoes, eggplant, olives, basil and ricotta is definitely a winner in our home.

With just a few basic ingredients, you can create a delicious dish that is easy to prepare and just as simple to make. We used Casarecce pasta, but any type of pasta will work.

Ingredients:

- 1 x kilo ripe truss tomatoes, blended into a sauce
- 1 x black eggplant, chopped into rustic size pieces
- 1 x Spanish onion, finely chopped
- 2 x cloves garlic, chopped
- 1 x small bunch fresh basil
- 12 x Kalamata olives
- 500 grams Casarecce pasta
- olive oil
- 1 x teaspoon white vinegar
- 1 x teaspoon sugar
- salt & pepper to taste
- 200 grams x fresh ricotta

Method:

- Lightly cover base of saucepan with olive oil and add Spanish onion. Saute for one minute and add eggplant. Cook for another 2 minutes.
- Add fresh tomato sauce, garlic, salt, pepper, sugar and vinegar and bring to a boil, stirring occasionally.
- Lower heat to medium and allow to slowly simmer for 30 minutes.
- In the meantime, while sauce is simmering, bring a large pot of salted water to a boil and cook pasta to taste.
- Add olives and basil leaves and allow to cook for another 10 minutes, or until sauce has thickened.
- Drain pasta and lightly drizzle with olive oil.
- Add sauce to pasta and crumble ricotta on top.

LAVENDER- LOVELY FOR WINTER

Lavender has so many health advantages- especially in the cooler months- it can help fight colds, flus and sinuses. It’s also known to ease headaches, plus relaxes the body and mind. You can drink it as a tea, use it in cooking and also add it to lotions for better skin and hair.

CREATING A MINI INDOOR HERB GARDEN

Trying to keep toddlers entertained in the cooler months can be quite a challenge and I’m always trying to come up with new, fun, creative and unique ideas to keep Nikoleta entertained and enlightened at the same time.

This week we took a trip to our local Bunnings store and picked up a few of our favourite seasonings- so mummy and her little helper can create a mini indoor herb garden that Nikoleta can watch grow everyday. It will include parsley, basil, thyme, oregano, rosemary and mint.

It’s also such a great idea to introduce herbs and a variety of tastes at a very young age- as studies have proven the earlier you do so- the less likely you will have a fussy eater on your hands.

LIGHT & SIMPLE BRUNCH

One of my all time favourite combinations for a light and simple Sunday morning eats is sourdough spread with full cream ricotta, toppled with walnuts and fresh figs, lightly drizzled with organic honey and sprinkled with cinnamon. Even though figs aren’t in season in Australia at the moment, I picked these up from my local grocer on the weekend and they are locally grown- yes they are pricier than normal but tasted ever-so-delish!

MELTED NUTELLA & BANANA

For a perfect afternoon pick-me-up, spread some (ok lots) of Nutella onto non-stick baking paper, chop up a banana, fold paper over to cover it all and then place on to a pre-heated sandwich press for one minute.

This yummy melted Nutella and warm banana will definitely satisfy any sweet tooth in just one minute!
